Huevos Rancheros


1 cn Diced Tomatoes (15 oz)
1 cn Tomato Sauce (3 oz)
1 t Garlic (minced)
1 T Chili Powder
1⁄3 c Onion (chopped)
1⁄3 c Red Pepper (bell, chopped)
2 Eggs


Mix all ingredients except eggs in sauce pan. Cook on med-high heat for 30 minutes. In a nonstick skillet, “fry” two eggs. Top the eggs with the chili before serving.

Yield: 1 serving
