Want something Italian? How about lasagna?

Ingredients

Zucchini (or Eggplant)
Ground Beef
Cottage Cheese
Low-Carb Spaghetti Sauce
Fat Free Mozzarella (or cheddar)


Instructions

Peel zucchini and then just grate it into ribbons in the layers. Layer with ground beef, cottage cheese, sparse low carb spaghetti sauce, repeat layers and some fat free cheddar on top. You can even try this one with eggplant.
