Mixed Vegetables in Marinade
Ingredients
1 | Cucumber (Large, thinly sliced) | |
1 | Red Pepper (Medium bell, cut into 1/2 inch strips) | |
1 | Green Pepper (Medium bell, thinly sliced) | |
1⁄2 | c | Balsamic Vinegar |
1 | t | Olive Oil |
4 | pk | Sugar Substitute (like Splenda) |
Salt and Pepper (to taste) |
Instructions
Combine vinegar, oil and sweetener with 1 cp of water. Place cut vegetables in a bowl, coat with the marinade, cover and let sit overnight. Season with salt and pepper, to taste.
Yield: 1 serving
