Veggie and Egg Salad

Ingredients

2 Eggs (Hard-boiled, diced)
1⁄2 c Mushrooms (White, sliced)
1⁄4 c Radish (sliced)
3⁄4 c Spinach (raw)
1 T Olive Oil and Vinegar dressing


Instructions

Toss the spinach leaves with the olive oil and vinegar dressing. Place the dressed spinach on a plate and top with the eggs, mushrooms and radishes.

Yields: 1 serving
